UKTV and nine graduates from Fifteen, the Jamie Oliver founded London restaurant that runs a pioneering chef apprentice scheme, have teamed up for a special project in which they share a range of cooking methods on the Good Food website.
The techniques, from blind baking to making salsa verde, are designed to help both beginners and confident cooks learn some essential kitchen secrets.
The idea came about as part of UKTV’s support for the work of Fifteen which recruits hard-to-reach young people and offers them the chance to train as chefs. They were filmed at Lewisham College, where the trainee chefs spend part of their training studying for their NVQ2.
In addition to its work with young people, Fifteen’s chefs and apprentices often go out into the community leading workshops and training sessions on a wide range of food related topics. Fifteen reached 2,000 people in this way last year and the UKTV techniques will help the organisation to reach many more.
Wendy Richmond, Communications Manager, Fifteen says: “Quite a few of the chefs on the film have only graduated in the last year and it’s fantastic to see them being the teachers, sharing their knowledge in this way. We are very proud of them and hope that website visitors will find the techniques helpful when they’re next tackling a recipe.”

The success of the former trainees at Fifteen is epitomised by Aaron Craze, who now has his own television series on Good Food; Rude Boy Food and is a regular on the channel’s daily TV show Market Kitchen.
