Fifteen goes to Jersey
It rained, it hailed and then the sun finally shined - ending fifteen's first ever sourcing trip to Jersey on a complete high. The producers of Jersey are passionate people and it's a real honour to be given the chance to see at close hand all the hard work that goes into producing such magnificent produce.
Our two-day trip varied from seeing mushrooms grown from old French oaks at Funghi Delecti to a seafood odyssey where we foraged for own food before sampling ormers, most commonly known as abalone, and praiers, a type of Jersey clam.
Another highlight was the cook off competition at Highlands College where eight Fifteen apprentices were teamed with eight Highlands students to cook a Jersey menu. Apprentices Cosmos Lemos and Jeff Cresswell won the contest with their team partners Daniel and Levi. The two Highlands students will be coming to Fifteen in the summer for a two-week work placement as their prize.
