Apprenticeship programme outline
Cycle 1 (Sept - Dec)
1 week induction
10 weeks based at Lewisham College with 1 day at Fifteen and 1 day spent on the 'Open Door' programme.
Cycle 2 (Dec - Sept)
30 weeks based at Fifteen with 2 days at Lewisham College and 1 day spent on the 'Open Door' Programme.
5 weeks work placement (3 weeks in a restaurant, 1 week at a fishmongers and 1 week at a butchers)
The programme lasts 1 full year, which includes 4 weeks holiday.
Each apprentice achieves an NVQ Level 2 qualification in Professional Cookery and Food Preparation.
In addition to the college and kitchen based learning the apprentices experience:
• The 'Open Door' personal development programme.
• Sourcing trips to Fifteen’s suppliers
• A team-building residential
• Trips and excursions in and around London
